What's on the Menu? Chickpea & Black Bean Stuffed Sweet Potatoes



This is my favorite type of meal - simple, healthful, and filling! You can add other ingredients you love or add another protein of choice! 

Serves 2


Ingredients: • 2 sweet potatoes • 1 cup black beans  • 1 cup chickpeas • cumin, to taste • salt, just a pinch • pepper, to taste • cayenne pepper, just a dash  • olive oil • optional: cheese, meat protein



How-To: 

Preheat oven to 400F. Cut sweet potatoes length wise and lightly coat in olive oil and sprinkle with salt and pepper. Place in oven. Place rinsed and dried (use a paper towel to help remove skins) chickpeas in a pan. Add olive oil, salt, pepper, cumin, and cayenne pepper. Roll chickpeas in mixture until thoroughly covered. Place in oven. Cook along with sweet potatoes for 40-50 minutes. Chickpeas may need to be removed before sweet potatoes.  


Once sweet potatoes are cooked, remove from oven and allow to cool for a few minutes. Gently remove insides with a spoon or ice cream scoop. Place in a bowl along with black beans. Season and gently fold ingredients. Scoop mixture back into skins and place back in oven for 15 minutes. Optional: top with cheese before placing into oven. Once mixture is heated through, remove from oven and top with chickpeas. Serve hot and enjoy!
